Super Simple Summer Cocktail Recipes

When entertaining for the summer, the last thing I want to have to do is make complicated cocktails. I may pin those drinks – the ones where I have to look up all the ingredients I’ve never heard of, the ones that require 3 small appliances and 4 different utensils, only for my kitchen to resemble the aftermath of a 3 course dinner – but I rarely make them. Instead, I’m a big fan of drinks that only take a few ingredients where each plays a starring role in creating a delightful combustion of flavours. Call me lazy but it is summer after all.

Both of these super simple summer cocktails contain ginger beer which gives each a surprising hit of heat offset by a cool counter flavour. I like to think they act as the perfect foil for summer evening gatherings where the heat of the day plays off the coolness as the sun sets. And best of all, the ingredients can be found at your local supermarket and take less than a few minutes to pull together. Which means you can spend less time in the kitchen and more time in the garden soaking up the rays with your friends and family.

Ginger Apple Sparkler Summer Cocktail Recipe

1 shot of Southern Comfort

100ml Cawston Press Apple and Ginger juice (you get this at any major supermarket)

80ml Ginger Beer

1 lime

Sliced apple for garnish (I used Golden Delicious)

Add ice to a tumbler and squeeze 1/4 of a lime into the glass before throwing it in. Add the Southern Comfort and apple & ginger juice. Top with ginger beer. Add slices of apple and lime as a garnish and serve.

Cranberry and Mint Summer Cocktail Recipe

1 shot of Disaronno

100ml Cranberry juice

80ml Ginger Beer


Mint Leaves (save some for the garnish)

In cocktail shaker, add one icecube, 4-5 torn up mint leaves, ¼ lime (squeezed) and 1 shot of Disaronno. Shake well for around 1 minute to release the oils from the mint leaves and mix everything to form a lovely elixer.

Strain into a tall glass over ice and then the add cranberry juice and top with ginger beer. Garnish with mint leaves and lime slices and serve.
